Guest Blogging at Rasa Malaysia - Soto Ayam / Chicken Soto


Rasa Malaysia has been inviting me to guest blog at her blog for a while but I just did not know what to make. So for New Year's eve, we were invited to their place and she requested me to make some Soto Ayam. I figured since I will be making my Soto Ayam again, I might as well use it as my guest blogger entry.

Hi,
I am going to try ur recipe - never did this with coconut milk before - i normally rebus with the pre prepared soup bungkus - makes life easier but am gonna be adventurous and try.

Hi AK, when you make soto from scratch and adding coconut milk, you'll get that extra thickness for the soup. Good luck!

This looks absolutely wonderful and so warming! It's exactly what I need so I will be trying it out this week. I just wanted to check though - I noticed that this serves 8-10 people but this soup only calls for 5 cups of water?

Anon, it depends on how big is your bowl and how much you eat. If you're afraid you're going to run out of soup, just add more water or make sure you're cooking for less people. ;)

Hi SaltnTurmeric,

I just wanted to let you know that I made this dish last night, and it was absolutely delicious! I left you a comment earlier about the amount of water, and did end up using just 6 cups. It was perfect for the 4 of us! Thank you for sharing the recipe - everyone really enjoyed it. Just curiously, if I were cooking for more people, and wanted to double the recipe, would you suggest doubling the amount of the 4 spices, as well as the onion/garlic/ginger?

JN, my pleasure and im glad you enjoyed the soto ayam. On the amount of 4 spices, you can just add a few on top of the recipe like maybe use 2 star anise and 5 cardamom seeds. They are more for the smell and taste. But by all mean use more if you like it. The same goes to grounded ingredients. If you double the ingredients, you can add up to 14 cups of water instead of just 12. Hope that helps. Email me if you need any more help. You can find my email add on my profile page. :)

This looks more like Soto Medan rahter than Soto Ayam (because of the santan). And without begedil & sambal kicap? Soto is incomplete without that.

My family has been making soto for ages and since there are a variety of soto, this looks more like Soto Medan.

The more commonly known Soto in malaysia are without the santan (coconut milk)- http://anakcina.wordpress.com/2007/05/09/soto-ayam/

QM, my family calls this Soto Madura but for majority's sake, I just call it Soto Ayam since the main ingredient is chicken. I do make sambal kicap in my previous post but have always been lazy to make bergedil. It is just a pelengkap but doesn't make it any less of Soto Ayam. Like I said in almost all my posts, I cook stuff according to my liking. I definitely did not cook to satisfy your ego. Thank you for dropping by anyway.

I made this delicious soto twice and am still loving it. I add in more things like hard boiled eggs and chopped chili because we like it that way. Also increase the spice because we like it strong. Thank you very much once again!
