Chicken and Beef Satay Recipe

chicken satayAs promised in my previous post of Foodbuzz May 24,24,24 here is the recipe for Chicken and Beef Satay with Peanut Sauce. Some of you may already know that I have made and posted the recipe for Satay before but since this time I used a different recipe, I thought I would post it as well. This recipe was given to me by my friend Mai, a wife, mom, doctor and student who is doing her PhD in England. Thank you Mai!

Chicken Satay Recipe

(makes around 100 sticks)

5lb boneless and skinless chicken breast, sliced and cubed into 1in sq and about 1/2cm thick

1 pack grated lemongrass (14oz)
1/3 cup cumin powder
2oz fennel seed (grind)
1 1/4 cups sugar
Salt
1/4 cup turmeric powder
1/4 cup water
Wooden skewer (soaked in water 2hrs prior to being used)
Oil + honey/sugar

1. In a big bowl, mix all the ingredients (except chicken) together and taste. Add chicken to it and mix well.

2. Transfer them into 2-3 ziplock bags and marinate overnight in the fridge.

3. A few hours before grilling, take them out and let them cool to room temperature.

4. Thread the wooden skewer with 3 pieces of chicken each.

5. Grill on a direct fire. Flip every 15-20sec so the meat don't get burned and baste with oil +honey/sugar each time you flip them.

6. Take them of the grill and serve with Rice Cake and Peanut Sauce.

**For Beef Satay, just replace chicken with beef. The marinate are all the same.

beef satayI have posted the easy peanut sauce recipe before but to make it easier for you, here they are again.

Peanut Sauce

24oz (680gm) dry-roasted peanuts, (I use store bought)
3 cups water
1/4 cup sambal oelek (less if you dont like it too spicy)
4oz palm sugar
salt

1. Grind the peanuts in a food processor. Longer if you want a finer peanuts.

2. In a large pot boil the water, sambal oelek, palm sugar and ground peanut. Stir continuously.

3. Once its boiled, turn down heat and let it simmer. Add in salt and taste. Give a good stir every 15-20min.. This will take a very long time. It took me between 2-2.5hrs to get the right consistency. The peanut and water should combined nicely.

The recipe will give you a lot of peanut sauce. Just freeze the amount that you are not using for later use.

What a useless Malaysian I am - I had to call my dad to translate your message for me- left KCH when I was only 3 so I grew up speaking English. My dad was pretty confused, the "kcg" threw him off so I shot an email to my cousin in KCH and he confirmed what your message meant LOL.

Your satay recipe looks great. The first time I tried to make a satay beef stir-fry for my husband was a complete disaster - my hubby still remembers it as the "peanut butter beef" incident. I think I've become a much better cook since then!

Phyllis, im so sorry! Didn't realise you don't speak bahasa much. lol Oh we all have THAT disaster moment esp when we were still a newlywed! haha.

Gert, yes do try and let me know about it ok? Since you like your food very very spicy, just use more sambal oelek.

Just had satay last Saturday, of course, bought from the stall. Nowadays, i don't really have to sweat in the kitchen to be able to enjoy satay! Thank goodness! ;)

Alamak Farina..kenapa my beef sate jadi keras. U ada apa apa petua supaya daging tu tak jadi keras?baling kat dinding , dinding pun boleh pecah lor..hehehe

Dura, maybe you cooked it too long. Tau lah daging kan. Terlebih masak sikit esp dry-cooking like satay mesti dia keras.

Teringat I masa zaman2 student kat Indiana 13 tahun duluuuu...we made satay several times too. I was a simple cook so the more "complicated" dishes were initiated by my older housemate. Hmmm I dont remember putting fennel & cumin but I did remember we blended onions for the marinade.

Then the guys yg bakar...ahhhh those were the carefree days :)

I really cannot tahan satay sauce with peanut butter. It has to be authentic. Your satay and kuah recipe looks great. I can't imagine not getting to taste any of this if away from Malaysia or Singpaore.

SoHoMama, fennel tu yg bagi the satay smell. I pun dulu add onion jugak but this time i decided to try recipe my fren bagi tu.

Jo, haha. True. I got my taste of peanut buttered peanut sauce at the restaurants here and I just can't eat them.

Maya, usually tak cukup kuah so this time around I make sure I buat banyak. ;)
