Cajun Chicken Pasta Recipe



Chicken Cajun Pasta is one of my husband's favourite. Everytime we go to BJ's, this is what he would order so I figured I'd try make this at home. It took me quite a while to get the recipe right and after a few trial and errors, both from recipes I got online and my own interpretation, I finally figured out how to make it right. It is also very easy and for this Chicken Cajun Pasta recipe, I opted to use more dried seasonings instead of fresh ones so it would be easy for those who would rather not buy a whole bunch of fresh ingredients and not use the rest.



Cajun Chicken Pasta Recipe
serves 2

1lb fettucine/linguine, cooked and drained

2 medium size cleaned boneless, skinless chicken breast
Cajun seasoning (store bought)
1tsp olive oil

2tbs butter
1qt heavy cream
4-5pcs sundried tomato
1/2tsp chopped onion
1/4tsp garlic salt
1 stalk green onion, thinly sliced
A dash of cayenne pepper, optional

1. Marinate chicken breast with cajun seasoning.

2. In a big heavy skillet, heat olive oil in medium high and add chicken until they are cooked. Set aside.

3. Using the same skillet, lower the heat to medium low and add butter. Scrap the crust from the bottom of the skillet. Add the rest of the ingredients and stir continuously until it boils. Taste and add pasta. Continue stirring until all the pasta are coated with the sauce.

4. Serve immediately with sliced chicken breasts.

*** Don't let the cream on the stove without stirring and/or with high heat. This will cause the cream to curdle.

oh wow an update ; ) Looks delish Farina! Will give it a try. When you say Cajun seasoning, does this mean, its store bought? U know me, i am an idiot at cooking, so thats why the stupid question, sorry.

Lovely. What could go wrong with chicken, butter, and heavy cream ? ;-)

You know what? Dried Fettucinne and regular Spaghetti are two of the pastas that I can never cook right. Either too firm or too soggy and so big.
